Rundown is a Jamaican and Trinidadian dish consisting of a selection of ingredients cooked down in tomato, onions and traditional seasoning. Our Rundown Tofish is served with garlic mash and tenderstem broccoli. I would always sneak a taste of the rundown sauce from the pot whilst Mom was looking away. DON’T TELL HER!
Lemon Pepper & Herb Pasta Alfredo with Baby Spinach
Alfredo is an Italian dish made up of core components of butter and cheese, which emulsifies the sauce, coating the pasta. It is named after Alfredo di Lelio, who featured the dish at his Restaurant in Rome in the early 20th century. Since then, the dish has travelled and became commercialised, by adding heavy creams and other ingredients that make the dish diverse.
Jerk Chick’n with gravy, braised red cabbage, rice, peas and tenderstem brocolli
Jerk is a complex blend of seasoning including scallions, onions, scotch bonnet peppers, salt, thyme, allspice, black pepper and many other spices. All its ingredients grow on the island’s fertile green landscape. We marinate our Chick'n for a prolonged period and then slow roast it in the medley of Jamaican spices. Served with some traditional rice and peas, sweet jerk gravy, braised cabbage and tender-stem broccoli.
Jamaican Jackfruit Mutton with cabbage, plantain, rice & peas
An absolute favourite growing up. There was nothing better than waking up to the aroma of a symphony of spices that had been slowly simmering in the Dutch Pot. The soul classics are playing as my mother is cleaning the house after spending hours cooking up a storm for the family. This is a staple dish that is cemented in Caribbean culture, so to make a vegan version and be proud of the outcome is truly an honour. We present to you, the national dish of Jamaica (turned vegan) Jackfruit mutton with rice and peas.
